Hello again!

I bet, at one point in our lives, we have all wanted to open a hamburger stand. My dream was to open the carry out across from my alma mater, Wichita High School North. It’s been available for sale several times in the past and the thoughts go through my head everytime. I’ve already settled on a business model for it. I’d go into partnership with my good friend, Joe Stumpe. You all probably know Joe, he’s a foodie, a singer/songwriter and a resident of north Riverside; just a short distance from North High. We'd call it Smok’n Joe’s, serve the best Hatch Green Chile Cheeseburger around and serve up milkshakes just like Squeezer's Palace did back in high school. In the winter months, we’d add Pork Chile Verde stew to the menu.  
One roadblock in the process is Carrie, Joe’s wife. She has threatened me within an inch of my life if I ever mention it again to Joe! This may or may not be my last attempt :).

To help fulfill my dreams of offering up my Chile Verde at a restaurant, I’ve talked Jennifer Ray from the Monarch in Old Town to let me in the kitchen and cook up a batch. That’s where I am today as you’re reading this. I got up early to start slicing onions, grilling pork butt, and cleaning Hatch Green Chile peppers. This is a new adventure for me. Not the cooking of green chile, but cooking mass quantities of the goodness from the Southwest. Just like my smaller crock pot quantities that I’m accustomed to preparing by adding a bit of this and a bit of that, I know it’ll be the same way with this batch.  
We'll be serving it up tomorrow, here at the Monarch starting at 11 AM. It'll be served until it's gone, so swing by for a bowl. Another exciting thing about this event, is a portion of the proceeds will go to our good friend Paxton, and Paxton's Blessing Box.
Paxton’s mission is quite simple. It’s Bringing HOPE to those in need, ONE BLESSING at a time.

"Take a blessing when you need one, leave a
blessing when you can."

I hope you’ll come down tomorrow to the Monarch in Delano, just across from the clock tower. Enjoy some Chile Verde, bring a non-perishable food item or hygiene product to add to one of Paxton’s boxes. They're also collecting socks during the month of October, for their annual Socktober drive. They accept hand and toe warmers as well!
At this point, Smok’n Joe’s is a dream; and I know that a restaurant is hard work. I hope to see you tomorrow at the Monarch!
